Butcher & Fish Fabrication Specialist
Oxnard, CA

We are seeking a skilled and detail-oriented Butcher & Fish Fabrication Specialist to join our opening team in Oxnard, California. Inspired by the bold flavors of Mexico, Spain, and the Caribbean, we are a modern Latin fire-driven dining experience built around exceptional ingredients, live-fire cooking, and culinary craftsmanship.

This role is critical to the success of our kitchen. The ideal candidate has experience breaking down premium cuts of meat, portioning proteins with precision, fabricating whole fish and seafood, and maintaining the highest standards of quality and consistency. We are looking for someone who takes pride in their craft and understands that preparation is the foundation of every great dish.

Responsibilities
  • Receive, inspect, and properly store all meat, seafood, and protein deliveries

  • Fabricate and portion premium cuts of meat according to restaurant specifications

  • Clean, break down, and portion fish and seafood products

  • Maintain consistent portion sizes and quality standards

  • Ensure proper labeling, dating, and storage procedures

  • Assist with inventory management and ordering needs

  • Monitor product yields and minimize waste

  • Maintain a clean, organized, and sanitary work environment

  • Follow all food safety and HACCP guidelines

  • Work closely with the Executive Chef and Sous Chef on daily production needs

  • Assist with prep and kitchen production when needed

  • Help maintain consistency across all protein preparation and presentation standards

Qualifications
  • 1+ years of professional butchery, fish fabrication, or protein preparation experience

  • Experience working with premium meats and seafood

  • Knowledge of fabrication techniques, portioning, and yield management

  • Strong knife skills and attention to detail

  • Understanding of food safety, sanitation, and proper storage procedures

  • Ability to work efficiently in a fast-paced kitchen environment

  • Strong organizational skills and time management

  • Ability to lift up to 50 pounds and stand for extended periods

  • Food Handler Certification required

Preferred Qualifications
  • Experience fabricating whole fish

  • Experience with dry-aged, premium, or specialty meat programs

  • Experience in chef-driven or upscale restaurants

  • Understanding of live-fire cooking concepts

  • Knowledge of Latin cuisine and seafood preparation techniques
